Cheesy Egg White Sausage Bake

Egg bakes are such a great and easy breakfast meal prep. They’re easy to store, reheat so well and keep their fluff and flavor!

Ingredients
  

  • 1 lbs ground pork sausage ⁣
  • 1  (32oz) container of egg whites
  • 112 g reduced fat mozzarella cheese shreds ⁣
  • 68 g  chopped red bell pepper (~1/4 large)⁣
  • 85 g chopped yellow onion⁣
  • 252 g (3 servings) @alexiafoods frozen hash browns ⁣
  • 1 tsp salt and pepper ⁣
  • 1 tsp paprika ⁣
  • dash of cayenne ⁣

Instructions
 

  • Brown sausage over medium heat. Add bell peppers, onion and hash browns to the pan with the sausage and cook until hash browns are browned. Layer into a greased baking dish. ⁣
    I use Chosen Foods Avocado Spray to spray on my dishes and pans.
  • Mix egg and spices in a separate bowl. Pour on top of sausage mixture. ⁣Top with cheese. ⁣Bake at 425 for 25 mins. ⁣
  • Remove from the oven and check eggs are fully cooked. Cut into 6 equal squares and enjoy!
    Stores in the fridge well and meal prep.

Notes

For lower fat content use 99% lean ground turkey and spice it up with seasonings.

  3. What other brands of hash browns can you use as a good alternative? I can’t find any stores near me who carry Alexia foods.
