Corn Casserole with Green Chiles

This easy recipe is thrown together in minutes, baked for 40 minutes, and enjoyed warm. The perfect side dish for sharing, this delicious dish is also a great addition to your holiday season table!

What you'll need

Mix ingredients

Combine the corn, green chilies, milk, cream cheese, melted butter, half of the cheddar cheese, half of the Monterey Jack cheese, salt, and pepper. 

Pour in dish

Pour the mixture into a prepared casserole dish. Sprinkle the remaining cheeses on top, then sprinkle the crushed crackers on top of the casserole.


Bake in the preheated oven for 35-40 minutes, until the casserole is hot, bubbly, and golden brown. Let the casserole cool for a few minutes before serving.

Can serve as  a dip too!

Serve it as a creamy appetizer dip with crackers or veggies.
