Made with freshly squeezed orange juice and instant espresso this Coffee Mocktail is the perfect summer refresher, afternoon pick me up after-dinner mocktail.
1/4cupfreshly squeezed orange juice or storebought juice
1tsp.maple syrup
1/4tsp.vanilla extract
1/2cupplain selzter or sparking water
Ice
Orange Slicegarnish
Instructions
Add the instant espresso powder, cold water, orange juice, maple syrup, and vanilla extract to a small jar. Cover with a tight fitting lid then shake vigorously for 30-60 seconds or until the espresso powder has fully dissolved.
Fill a tall tumbler or Collins glass half full with ice, then pour the shaken espresso mixture over it. Make sure to get the foam as well.
Top with the seltzer or sparkling water and garnish with an orange slice if desired.

If you have an espresso machine, you can substitute a double shot (2 ounces) for the instant espresso powder and cold water. I recommend allowing the shot to come to room temperature or chilling it down in the fridge before using it in the mocktail recipe.
