These Copycat KFC Bowls are made with blackened chicken, mashed potatoes and corn, smothered in a homemade gravy. This easy meal tastes just like the fast food favorite, no drive-thru necessary.
Melt the butter in a pan over medium heat. Add the flour and stir until combined and lumpy.
Very slowly add small amounts of beef broth while whisking the flour mixture. This will help break up the clumps along the way. Once you have used all the beef broth begin adding the chicken broth.
Season with salt and garlic powder and whisk until the gravy has thickened and lump free.
For the Bowl
Assemble your bowl - mashes potatoes, chicken, corn and top with gravy.
Serve immediately or prep for meal prep. Reheats very well.
NOTE! If you end up with lumps (gravy can be tricky) you can toss this in the blender or use a immersion blender for a few pulses and it'll be lump free.
