This Cottage Cheese Pizza has a high protein dough that can be turned into any type of pizza. It comes out soft on the inside with crispy edges, melty mozzarella and turkey pepperoni for a classically delicious pizza, perfect for busy nights.
In a large mixing bowl combine the flour, cottage cheese, salt, basil and oregano. Using a rubber spatula and eventually your hands mash the ingredients together until they begin to stick and form a large dough ball. This will take some work and time but it will come together. Just keep going! Using damp hands helps to keep it from sticking too much, just trust the process.
The dough will be VERY sticky and that is ok! Lay the ball onto a floured surface and roll it around so it’s coated in the flour. Lightly press it down into a thick disk. Transfer the disk to a large 12-inch cast iron (or larger) coated with nonstick cooking spray and press it out so it evenly reaches the edges of the cast iron surface.
Top the dough with the marinara sauce almost to the edge leaving a little bit of the crust showing around the edge.
Top the sauce with the shredded cheese and pepperonis. Lightly spray the edges of the crust with cooking spray to help them brown in the oven and place the pizza in the oven and bake for 25-30 minutes.
Remove the pizza, top with any additional toppings like red pepper flakes, Parmesan cheese or basil. Let the pizza cool in the pan for a few minutes before removing and cutting into 6 pieces.
For best flavors season with some Italian seasoning and fresh basil on top.
Notes
The crust will harden as it sits. If it seems too doughy, let it sit for a few minutes.
