This bbq chicken Lavash Pizza makes a great light lunch or easy dinner. Made with frozen chicken strips, red onion and a healthy drizzle of bbq sauce and ranch dressing, this flavorful and healthy meal is ready in less than 15 minutes.
Preheat oven to 350 degrees Fahrenheight. You can pre-crisp your lavash by putting in the oven at on a baking sheet for 5 minutes once the oven has heated.
Place lavash on a baking sheet and spread the BBQ on to coat evenly. Top with 1/2 of both cheeses, chopped chicken and onion. Top with the remaining cheese. This helps hold the toppings down.
Bake in preheated oven for 5 minutes until the cheese has melted. Broil at the end to get the edges of the pizza nice and crispy. Be careful not to burn.
Drizzle with ranch and top with fresh cilantro.
Notes
Use tortilla instead of lavash bread.
Chop the chicken small so it doesn't weigh down the lavash.
To lower the fat, use low-fat cheese.
