This Protein Frozen Yogurt Bark is made with Greek yogurt, a touch of honey, churro protein pretzels and a layer of rich chocolate. High in protein, it's the perfect treat with just the right balance of richness and sweetness.
In a bowl, combine the Greek yogurt and protein powder until you have a frosting-like consistency. Taste and add honey if needed to sweeten, this will vary based on the type of protein you're using.
Line a baking sheet with parchment paper, I like to use a half sheet and make the yogurt layer thick. Spread the yogurt mixture on the parchment paper.
Top the yogurt with the pretzels, either whole of broken into pieces and place in the freezer for at least one hour to harden.
Once the yogurt layer is hard, add the chocolate chips and coconut oil to a small bowl and microwave in 15 second intervals, stirring each time until fully melted and combined. Spread over the yogurt and pretzel layer. Add your toppings and return to the freezer to harder for another 30-60 minutes.
When ready to enjoy, remove from the freezer, break into pieces and enjoy. I typically break this into 6 large chunks which is reflected in the nutrition information.
