Chocolate Rice Krispie Treats with Protein Powder

These Chocolate Rice Krispie Treats are the perfect no bake dessert. Made with chocolate chips, marshmallows, Rice Krispies and a sneaky scoop of undetectable protein powder, this easy recipe is a chocolate lovers dream.

These classic cereal treats are filled with gooey marshmallow, melted chocolate and the perfect amount of crunch in every bite. For a little bit of added protein, we’re using protein powder to give these some added oomph.

Make these yummy sweet treats with any type of chocolate chips and any cereal you want. From classic rice Krispies, to a higher protein cereals like Magic Spoon or plant based cereal like Three Wishes these treats are delicious with all of the above and they’re kid and adult approved.

These Rice Krispie treats will transport you to childhood with each and every bite. To keep the nostalgia going, or you just want more chocolate, try classic chocolate chip cookies, Oreo white chocolate cookies, strawberry crunch cottage cheese ice cream bars or dark chocolate coffee cookies.

Ingredients and Substitutes:

These are the main ingredients and substitutions for these chocolate Rice Krispies. See the recipe card below for the full ingredient list and instructions. 

Rice krispie cereal, chocolate protein powder, cocoa powder, chocolate chips, flakey sea salt, cubed butter and mini marshmallows for making chocolate rice krispie treats.
  • Unsalted Butter
  • Mini Marshmallows: I don’t suggest using large marshmallows because the mini ones melt and blend much better.
  • Chocolate Protein Powder: I used PEScience Chocolate Truffle, use code OHSNAP to save. This is my go to protein powder due to flavor and consistency. Feel free to use your favorite.
  • Unsweetened Cocoa Powder
  • Semi-Sweet Chocolate Chips: use dark chocolate for a deeper chocolate flavor or milk chocolate or white chocolate for sweeter crispy treats.
  • Rice Krispie Cereal: or use Cocoa Krispies for double chocolate rice krispie treats.

Variations

  • Top with melted creamy peanut butter for chocolate peanut butter Rice Krispie treats.
  • To up the protein and add a fun twist, use a protein cereal in place of the Rice Krispies. I usually do this with the chocolate or seasonal Magic Spoon flavors. My kids love when I do that!

Dietary Modifications

Let’s make these homemade Rice Krispie treats (a step-by-step visual guide):

Step 1: make the chocolate sauce

Add the butter to a large saucepan (image 1) and melt over medium heat (image 2). Add the mini marshmallows, protein powder, cocoa powder and chocolate chips (image 3) and stir to combine and melt the marshmallows and chocolate into a sauce (image 4).

Step 2: add in cereal

Remove the pot from the heat and immediately mix in the cereal (image 5), stirring to combine. This will take some arm power to get it to fully mix and combine, just keep mixing (image 6)

Step 3: add marshmallow mixture to prepared pan

Add the cereal mixture to a wax paper lined 8×8-inch pan (image 7) and press it down with a rubber spatula into an even layer in the baking pan (image 8). Let it sit until completely cooled and hardened, approximately 1 hour or more. Top with flaky sea salt for serving and cut into 16 equal squares.

Expert Tip!

Donโ€™t smash the treats in the pan too hard or youโ€™ll have dense Rice Krispies treats. You want some spacing between and pockets to get in there.

How do I store leftover Rice Krispies?

Store in an airtight container at room temperature for 2-3 days. If you’re bringing to friends of packing for lunch you can wrap individual servings in plastic wrap for transporting.

Can I use other cereals?

Yes, you can make these with any cereal you want. I like Cocoa Krispies for a double chocolate version or with Magic Spoon cereal for extra protein.
