Ground chicken stir fry

This ground chicken stir fry makes me happy. It’s such a simple dish but flavorful with a sweet and salty dance happening in the homemade sauce. I love that you can add whatever fresh veggies you have and any type of ground meat; it’s just so easy. To top it off, it’s high protein, low-fat, gluten and dairy-free. It might be healthy but this stir fry is anything but boring.

Why homemade stir fry sauce?

No stir fry is complete without a perfect sauce and this one is so easy and inexpensive, there’s no need to ever buy pre-made again. With fresh garlic, coconut aminos, maple syrup and sesame oil, this gluten-free stir fry sauce adds so much flavor with just a few simple ingredients.

Can you use other meats besides chicken?

Absolutely! Use ground beef, turkey, pork, sliced chicken breast or sliced beef. Follow the ground chicken stir fry instructions the same for any ground meat you use. For sliced meats, you’ll just want to be sure to brown the meat first. I would also suggest marinating the meat in a little extra sauce prior to cooking to give it some added flavor. 

What is tapioca flour and why do you always use it?

Tapioca flour is flavorless and mixes quickly unlike all-purpose flour which needs to cook a little longer to get rid of the powder-like texture. Tapioca flour is also gluten-free. For this recipe, we are using a tapioca flour slurry to thicken the ground chicken stir fry sauce at the end. You can also use cornstarch or any other thickener you’d like. 

Is this gluten and dairy-free

Sure is!! This ground chicken stir fry is dairy and gluten-free by using tapioca flour as the thickener.

Ingredients and Substitutes:

These are the main ingredients and substitutions. See recipe card below for full ingredients list and instructions for this ground chicken stir fry.

Ground Chicken: this recipe uses lean 96/4 ground chicken. You can use ground meat like turkey, beef or pork or sliced meat like chicken and beef for this recipe. 

Homemade Stir Fry Sauce: using Coconut Aminos, which is far less salty than Soy Sauce, maple syrup, sesame oil, ginger, garlic and chili garlic sauce you’ll have a delicious stir fry sauce. 

Vegetables: this recipe has broccoli, snow peas, carrots, green onions, water chestnuts and shredded carrots. You can use any combination you’d like or buy a pre-packaged bag of stir fry veggies. 

Tapioca Flour: to thicken the sauce at the end we are using a tapioca flour slurry. You can substitute with a cornstarch of flour slurry. 

Variations

  • Use ground beef, pork or preferred protein for this recipe.
  • Any vegetable combination works, both fresh and frozen.

How to make this Ground Chicken Stir Fry:

Step 1

Spray a pan over medium-high heat with nonstick spray. Add the raw chicken and brown. Break into bite size pieces. 

Step 2

While the meat is browning prep your stir fry sauce. Add all the ingredients to a jar with a lid and shake to combine. 

Step 3

Chop the broccoli into bite size pieces and add to a shallow bowl. Add just enough water to cover the bottom of the bowl and place in the microwave for 60 seconds to soften. 

Step 4

Once the meat has browned add the shredded carrots and broccoli to the pan. Stir and sauté on medium heat for 3-5 minutes. 

Step 5

Add the stir fry sauce, sliced water chestnuts, chopped green onions and snow peas to the pan. Stir together to get everything evenly combined and bring to a steady simmer. Simmer for 5 minutes. 

Step 6

Move the meat and vegetables to the side of the pan. Mix 1/2 tsp. of tapioca flour with 1/2 tsp. water in a small bowl and add to the sauce, separate from the meat and veggies. Stir the tapioca slurry in and you will immediately see the sauce begin to thicken. Mix together to evenly coat. 

Step 7

Top with extra chopped green onions, toasted sesame seeds and / or red pepper flakes. Serve alone, over rice or cauliflower rice or zoodles. Enjoy!

What to serve with this recipe?

Serve alone or with white rice, brown rice or cauliflower rice. Wrap in a tortilla or lettuce for a stir fry wrap or add this ground chicken stir fry to chopped lettuce as a salad.

  3. Is it correct that the coconut amino’s is supposed to be 1/3 cup and then 1/4 cup also? That seems like a lot.
