This cottage cheese queso is made in a sizzling hot cast iron with turkey bacon, melted cheese, cream cheese and cottage cheese — making it a lighter, higher protein version of a classic cheese dip without lacking flavor!!

  • Low fat cottage cheese — blended until completely smooth, this is the creamy high protein base. Once it is blended you will not taste it or feel it — it just becomes silky and rich
  • 1/3 less fat cream cheese — this is what makes Danielle’s version different from every basic blender recipe out there. The cream cheese adds richness and helps the queso hold its texture without breaking or going grainy
  • Shredded cheddar cheese — freshly shredded melts better than pre-shredded. Pre-shredded cheese has anti-caking agents that can cause the queso to go grainy so take the extra minute to shred your own
  • Fresh tomato — chopped and sautéed first to build a flavor base. This is what gives the queso that restaurant depth that a basic microwave version just cannot replicate
  • Jalapeño — deseed for mild heat or leave the seeds in if you like it spicy. Sautéed with the tomato and garlic so the heat mellows and the flavor deepens

  • Keep the heat on low — this is the number one way to prevent grainy or separated queso. Cottage cheese proteins break down under high heat and once the queso separates it is very hard to bring back. Low and slow is the only way
  • Stir constantly — do not walk away from the cast iron while the cheese is melting. Keep stirring so the heat distributes evenly and nothing sticks to the bottom
  • Freshly shred your cheddar — pre-shredded cheese has anti-caking agents that can cause graininess in the final queso. It takes one extra minute and makes a noticeable difference in texture
  • Sauté the vegetables first — do not skip this step. Cooking the tomato, jalapeño, and garlic before adding the cheese builds a flavor base that makes this taste like restaurant queso instead of a quick blender dip
  • Serve immediately — cottage cheese queso is at its best right out of the cast iron. If you are serving it at a party keep it warm over the lowest possible heat and stir occasionally

Why Is My Homemade Queso Grainy or Separated?

This is the most common issue with cottage cheese queso and it is almost always preventable. Here is what causes it and how to fix it.

Common Causes:

  • Heat was too high — this is the number one culprit. High heat breaks down the proteins in cottage cheese and causes the queso to separate into a grainy, watery mess. Always keep the heat on low and never rush it
  • Cottage cheese was not blended smooth enough — any remaining curds will break down during heating and release liquid into the queso. Blend until completely smooth before it ever touches the pan
  • Pre-shredded cheese — the anti-caking agents in pre-shredded cheese can prevent it from melting smoothly and cause graininess. Freshly shredded cheddar is always the better call

How to Fix It:

  • Pull the cast iron off the heat immediately
  • Stir vigorously — sometimes the queso will come back together as it cools slightly
  • If it is still grainy, add a small splash of milk and stir over very low heat
  • It will still taste great even if the texture is not perfect — do not throw it out

How to Prevent It Next Time:

  • Use freshly shredded cheese every time 
  • Blend longer than you think you need to
  • Keep the heat on the lowest setting possible

Storage and Reheating

How to Store:

  • Let the queso cool completely before transferring to an airtight container
  • Store in the fridge for up to 3 days
  • Store without the toppings — the turkey bacon, cilantro, and red onion are best added fresh

How to Reheat:

  • Stovetop is the best option — add the queso to a small pan over low heat and stir constantly until warmed through. Do not let it get too hot or it will separate
  • Microwave works in a pinch — heat in 15-30 second intervals and stir between each one. Do not microwave on high or for too long
  • If it separates during reheating pull it off the heat and stir vigorously — it sometimes comes back together

Ingredients
  

  • 8 oz. low fat cottage cheese
  • 3 oz. 1/3 less fat cream cheese
  • 6 oz. cheddar cheese shredded
  • 1 small tomato chopped
  • 1 jalapeno chopped
  • 2 garlic cloves minced
  • 1/2 tsp. salt
  • 1/4 tsp. paprika

Toppings

  • 5 slices turkey bacon, cooked
  • cilantro
  • chopped red onion

Instructions
 

  • Add 5 slices of turkey bacon to a air fryer and cook for 5 minutes at 360 degrees Fahrenheit. Flip and cook another 5 minutes until crispy. Remove and chop. The turkey bacon will go on top of the queso.
  • Prep by chopping your jalapenos and deseeding (optional to leave seeds for added spice), tomato and garlic. Add to a hot cast iron over medium heat on the stove.
    Cook and stir often for 3-5 minutes until fragrant and tomatoes begin to soften.
  • While you cook the vegetables, using a immersion blender or food processor, whip the cottage cheese until smooth, similar to sour cream.
  • Add the cottage cheese and cream cheese to the cast iron and mix until well combined and no chunks are left.
  • Add the shredded cheddar cheese and mix well until it has completely melted.
    Remove the skillet from the heat top with turkey bacon, cilantro, and chopped red onion. Serve with your favorite tortilla chips or vegetables to dip with and enjoy your healthy queso dip.
