These Caesar salad smash tacos prove you can turn anything into tacos and people will love it. Made with store-bought dressing, ground chicken and crispy lettuce, these tacos are full of flavor, insanely easy to make and the best non-boring way to eat salad.

The best thing about smash tacos is how crunchy everything gets. The meat is cooked into the tortilla so each bite is full of crispy goodness. Using yogurt dressing keeps the fat and calories much lower than a traditional dressing but still has all the creaminess.

What are smash tacos?

I’m sure you’ve heard of smash burgers and smash tacos by now, but if not, allow me to fill you in. You take a small tortilla, press raw seasoned ground meat directly onto it so it covers the whole surface of said tortilla, then lay it meat-side down onto a screaming hot pan.

The meat sears flat against the tortilla so they cook together as one unit. The meat is done when golden and crispy, then you flip the whole thing to give the tortilla side a quick toast. No folding, no stuffing, no separate cooking. The result is a crispy, caramelized taco shell that’s fused with the meat.

Technically, you’re not really smashing anything. You’re spreading and pressing the raw meat flat onto the tortilla so there are no thick spots and the whole thing makes full contact with the pan. That contact is everything. It’s what gives you the sear instead of a steam.

Ground Chicken

Ground chicken is our go-to here – high protein, low fat, and it crisps up beautifully in the pan. Ground turkey works just as well with nearly identical macros but I find it has less flavor than chicken. Ground beef will give you more flavor but comes with significantly more fat, so factor that into your tracking.

White Corn Tortillas

Any type of tortilla but I like corn because they get perfectly crispy. Make sure you’re using the taco size and not the huge ones. The key to these smash tacos is their hand-held size. Small flour tortillas hold up great with smash tacos.

Romaine Lettuce

Nothing like fresh and crispy lettuce for the ultimate caesar salad. The cold crunch of the lettuce adds a great contrast to the hot taco.

Bolthouse Farms Yogurt Caesar Dressing

Using store-bought dressing makes this really easy to make and because we’re using a yogurt based dressing, it’s much lighter than a traditional caesar with all the same flavor. Compared to a popular Caesar dressing at 170 calories and 18g of fat, the one we’re using has only 50 calories and 2.5g of fat. Feel free to use our favorite caesar dressing or make your own!

Toasted Sunflower Seeds: usually a Caesar salad has croutons for some crunch. The toasted sunflower seeds mimic that while adding healthy fat. Swap croutons for the sunflower seeds if that’s what you have on hand.

Variations

  • Add cooked turkey bacon or bacon bits for extra crunch.
  • Add avocado for healthy fats.
  • Make these with ground chicken taco meat with your favorite taco toppings for a more traditional taco.

Dietary Modifications

  • For gluten-free, use a gluten-free tortilla.
  • For dairy-free, use a dairy-free dressing and omit the parmesan cheese.

  • Use a sizzling pan. Any type of pan will work, as long as it’s hot enough. Your pan is ready when a few drops of water sizzle. The hot pan ensures the meat gets crispy and slightly fried.
  • Press the chicken firmly into the hot pan. This gives you that golden sear.
  • Doneness tip: chicken needs to be cooked to 165 degrees F with no pink showing at the edges. Because it’s a thin layer of meat, it doesn’t take very long to cook – 3-4 minutes max.

Expert Tip!

Pressing the chicken firmly creates full contact with the pan, which is what gives you the sear instead of a steam. I like to use a metal spatula and brute arm strength to really smash it.

Ingredients
  

  • 1 lbs. ground chicken
  • 6 white corn tortillas
  • garlic powder
  • onion powder or granulated onion
  • salt and black pepper
  • 2-3 cups romaine lettuce, chopped
  • 1/4 cup Bolthouse Farms Yogurt Caesar Dressing
  • 1/4 cup shredded parmesan cheese
  • 2 Tbsp. toasted sunflower seeds

Instructions
 

  • Split the chicken into 6 equal chunks but do not roll into a ball. Take each chunk of chicken and spread it on one side of the tortillas. Season with garlic powder, onion powder, salt and pepper.
  • Heat a large skillet over medium heat and spray with cooking spray or olive oil. Once hot add the tortilla chicken side down. Cook for 3-4 minutes until cooked through and flip. Brown the tortilla. Repeat with all 6.
  • Add the chopped lettuce, dressing, cheese and sunflower seeds to a small bowl and toss. Evenly split between all 6 chicken tacos.
