This Biscoff protein smoothie tastes like someone blended a Biscoff cookie into a milkshake, except it has 52g of protein and keeps you full for hours.

I’m not joking. This Biscoff protein smoothie has become a staple in my house, and if you’ve been sleeping on cookie butter as a smoothie ingredient, we’re going to change that.

It takes 5 minutes and is incredibly indulgent but still fits into a healthy macro plan. This smoothie gets most of its protein from the protein powder and cottage cheese, which combined, deliver over 50g of protein in one serving.

What is Biscoff?

Biscoff spread (also called cookie butter) is those little red cookies you get on an airplane blitzed into a creamy, spreadable buttery texture. Think, peanut butter but with a warm caramelized, slightly spiced flavor that’s somewhere between gingerbread and caramel.

It’s made by Lotus and sold everywhere. One jar lasts a long time because you only need a tablespoon or two, and that small amount delivers HUGE flavor.

Biscoff Spread

The star of the show. We’re only using 1 tsp. and it’s honestly all we need. More than that it gets way too sweet – trust me. I use crunchy because I love the texture but feel free to use smooth.

For the oh so good crunch factor and makes it look pretty when sprinkled on top.

Vanilla Protein Powder

Milk

You can use any type of milk to play with the macros. Fairlife whole milk is the big win if you want to maximize protein. Almond milk is the lowest calorie option with the lightest flavor while oat milk adds subtle sweetness. Regular Fairlife 2% milk is what I use because it’s a solid middle ground.

Low-Fat Cottage Cheese

Use low-fat for a lighter smoothie, full-fat for a richer one. Plain Greek yogurt works too.

  • Add frozen banana to make this extra cold and creamy.
  • If you want this milkshake thick, use whole fat cottage cheese and whole milk.
  • For all my chocolate lovers, use a chocolate protein powder.

Dietary Modifications

  • For dairy-free, use a dairy-free protein powder and a plant based yogurt.
  • The Lotus cookies and cookie butter are not gluten-free, so this is not recommended to make gluten-free.

  • The smoothie came out too thin. Add liquid slowly, always one tablespoon at a time. If you’ve already over-poured, add a few ice cubes to thicken it back up without watering down the flavor.
  • The Biscoff flavor isn’t coming through. Make sure you’re using spread, not just crushed cookies. If it still feels muted, your protein powder might be competing, a strongly flavored vanilla or sweet cream powder can drown it out. A neutral or lightly flavored vanilla works best here.
  • It tastes too sweet. use only 1 tsp. of Biscoff spread and use unsweetened almond milk. The sweetness in this recipe compounds fast between the spread, the protein powder, and whole milk. Using just a small amount of Biscoff ensures it’s not too sweet.
  • The protein powder went chalky. This is almost always a powder quality issue, not a recipe issue. The protein powder you use genuinely matters in smoothies it needs to blend smoothly without grit. PEScience Gourmet Vanilla (code OHSNAP) blends clean every time.
  • It’s not thick enough to feel like a milkshake. Use whole fat cottage cheese and whole milk if you want this milkshake consistency. Reduce liquid by 2–3 tablespoons from whatever you normally use. Blend in short pulses rather than running it continuously – over-blending warms everything up and kills the thick texture.
  • Blender order matters. Add your liquid first, then the yogurt, then the protein powder and Biscoff on top. This protects your blender motor and keeps things from getting stuck under the blades.
