Blackened Shrimp Alfredo

Can you reheat leftovers?

Yes! Leftovers microwave great. If for any reason your pasta seems to dry out in the microwave you can add a splash of milk to get it creamy again. However, you should be just fine!

Ingredients and Substitutes:

Shrimp: I like to use frozen shrimp since it costs less at our local grocery store and the lady behind the seafood counter recommended I give it a shot a while back and I haven’t gone back. You can absolutely use fresh shrimp as well. Skip defrosting and be sure to devein and remove tails. You can also substitute shrimp with chicken. Cube chicken into bite size pieces and follow the same instructions. Be sure to cook until the chicken is fully cooked. 

Fettuccine Noodles: you can you use favorite brand or style noodles. Add more protein with Barilla ProteinPLUS Pasta or Barilla Gluten Free Fettuccine . For this recipe I am using standard Barilla Fettuccine. 

Blackened Seasoning: if you have a favorite pre mixed blackening seasoning you can use that here. However, most store bought seasonings do have added sugar or high salt and mine is pretty great. If you have tried my Air Fryer Blackened Chicken, it is a must! 

Alfredo Sauce: you could use almond milk or another dairy free alternative and cheese but do note it will not turn out the same. The whole milk is used to thicken the sauce. You could also try full fat canned coconut milk in it’s place. This will sweeten up the dish some. 

Lower Fat: use a reduced fat parmesan cheese in place of full fat to bring the macros down some. 

Lower Carbs: swap out the noodles with zoodles, Miracle Noodles, Healthy Noodles (I find these at Costco and LOVE them), or a mix of half and half. 

Toppings: top with additional parmesan cheese and freshly chopped parsley.

How to make Blackened Shrimp Alfredo

Step 1

Defrost the shrimp: Add the frozen shrimp to a bowl of luke warm water to defrost. Once the shrimp has defrosted remove tails and set aside. You can place in a colander and run water over them or directly in a bowl of water. Do not put them in warm water as it can easily start the cooking process. 

Step 2

Cook noodles: While prepping your shrimp cook fettuccine noodles in a pot of boiling water per package instructions. 

Step 3

Blackened Shrimp: Once the shrimp is shelled and ready, add paprika, garlic powder, cayenne, salt and pepper to the bowl of shrimp and mix together well to evenly coat. 

Step 4

Cook the Shrimp: Warm a large pan over medium heat and spray with nonstick cooking spray. Place the shrimp in the warm pan and cook until pink and cooked through. Approximately 4 minutes on each side for jumbo shrimp. Once the shrimp are fully cooked, pour into a bowl and set aside. 

Step 5

Make the alfredo sauce: In the same pan you cooked the shrimp add the milk, cheese, salt and pepper to taste and simmer until the cheese has melted and sauce begins to thicken. 

Step 6

Combine and serve: Add fettuccine noodles to the alfredo sauce and mix together to coat well. Serving options: Option 1: Add shrimp to the fettuccine and serve. Option 2: serve fettuccine and add desired shrimp on top. This is the best route if you want to be the most accurate with your portions.
