The secret is the smash technique. Very similar to a smash burger, raw seasoned ground chicken gets pressed directly onto a small tortilla and cooked meat-side down in a hot skillet. The result? A golden, crispy shell with perfectly cooked buffalo chicken in one single step. No oven. No extra pan. Just a hot skillet and dinner done fast.
We’re topping these with shredded lettuce and a creamy yogurt Caesar drizzle that balances out all that heat. At 18 grams of protein per serving, one pan, and less than 20 minutes, weeknight dinner just got deliciously spicy.

Lean Ground Chicken
Ground chicken works best for smash tacos because it spreads evenly onto the tortilla and cooks flat. 93/7% lean is the sweet spot because it has just enough fat to sear but not too much that the taco gets oily. Ground turkey is the closest 1:1 substitute.
White Corn Tortillas
Opt for the thicker street taco type of corn tortilla to avoid cracking. Low-carb flour tortillas or standard taco size flour tortillas hold up well for smash tacos.
Buffalo Sauce
Frank’s Red Hot has always been my favorite. Note, there’s a difference in Frank’s Red Hot, which is hot sauce only and Frank’s Buffalo Wing Sauce, which has butter in it so has a slightly higher fat content. Either works but will give different macros.
Romaine Lettuce
Using fresh and crispy lettuce adds texture and crunch. You can also use cabbage.
Bolthouse Farms Yogurt Caesar Dressing
Using store-bought dressing makes this easy to throw together and much lower calories and fat than a typical caesar dressing. Feel free to use your favorite caesar dressing or a blue cheese dressing for a more traditional buffalo wing sauce.
Toasted Sunflower Seeds
Gives it that oh so perfect crunch.
Variations
- Extra spicy: add crushed red pepper or extra hot sauce into the chicken mixture.
- Kid-friendly: cut buffalo sauce by half, add 1 tsp. honey to balance heat.
- Lower fat: use hot sauce and a small amount of light butter instead of buffalo wing sauce (saves ~2–3g fat per taco).
- Meal prep bulk version: double the chicken mixture, cook tacos fresh each day from the prepped mixture.
- Drizzle with homemade ranch dressing.
Dietary Modifications
- For gluten-free, use a gluten-free tortilla.
- For dairy-free, use a dairy-free dressing and omit the parmesan cheese.

- Heat the pan! Give it a full 2 minutes to get nice and hot. If you put them in too early the chicken will steam instead of sear and won’t give you that perfect crispy crust.
- Thin matters. Spreading the chicken thin is the whole game. Too thick and the inside stays raw while the outside overcooks and will cause the taco shell to crack when you flip it. Aim for the meat to reach the tortilla edges in a thin layer.
- Cast iron is king: It holds heat evenly and gives the best sear. A non-stick works but won’t get as crispy.
- The flip: It’s fast – 30 to 60 seconds on the tortilla side. You’re just crisping the shell, not cooking the chicken (that’s already done).
- Doneness cue: The chicken is done when it’s golden brown and no longer pink at the edges. You can check a corner with your spatula without wrecking the taco.
Expert Tip!
If your taco is sticking to the pan, it’s likely because your pan wasn’t hot enough. Be sure to heat your pan for the full-two minutes and use a thin wide metal spatula for the best grip.

Ingredients
- 1 lbs. ground chicken
- 2 green onions, sliced
- 2-3 Tbsp. buffalo sauce, Frank's Red Hot
- 1/2 tsp. garlic powder
- 1/2 tsp. granulated onion
- 6 white corn tortillas
- 2-3 cups romaine lettuce, chopped
- 1/4 cup Bolthouse Farms Yogurt Caesar Dressing
- 1/4 cup shredded parmesan cheese
- 2 Tbsp. toasted sunflower seeds
For Serving
- sliced avocado
- additional buffalo sauce
Instructions
- Add the chicken, green onions, buffalo sauce, garlic powder and onion powder to a bowl and mix until just combined.
- Split the chicken into 6 equal chunks, do not roll into a ball or anything. Take each chunk of chicken and spread it on one side of the tortilla until fully covered.
- Heat a large skillet over medium heat and spray with cooking spray or olive oil. Once hot add the tortilla chicken side down. Cook for 3-4 minutes until cooked through and flip. Brown the tortilla. Repeat with all 6.
- Add the chopped lettuce, dressing, cheese and sunflower seeds to a small bowl and toss. Evenly split between all 6 chicken tacos.
