This cottage cheese queso dip is the perfect way to enjoy a high protein snack. It has a thick and creamy texture from a blend of cottage cheese, shredded cheeses and taco seasoning and is the perfect spreadable dip.

This delicious dip is a game changer. I love setting this pimento cheese style queso out as an appetizer on game day or parties. It’s a great option if you’re craving a healthy queso dip but want to keep it easy and simple. There’s so much flavor from the taco seasoning and you just toss everything together and let it chill for about an hour.

Best described as a taco seasoned spreadable cheesy queso, this dip is delicious with fresh veggies, your favorite tortilla chips or as a spread on crackers.

These are the main ingredients and substitutions for this cottage cheese queso recipe. See the recipe card below for the full ingredients list and instructions.

Cottage cheese, bell peppers, olives, pickled jalapenos, taco seasoning, cheddar cheese, pepper jack cheese and cilantro for a dip.
  • Low-Fat Cottage Cheese: this is the main ingredient and the star of the show, you can use full-fat cottage cheese for a creamier dip.
  • Taco Seasoning: Siete brand Spicy taco seasoning is a great option or my homemade taco seasoning.
  • Cheese: I used shredded Pepper Jack cheese and cheddar cheese but you can also use Monterey Jack or Mexican blend cheese.
  • Black Olives: one small can of pre-sliced olives.
  • Bell Pepper: red but yellow or orange would work great as well.
  • Pickled Jalapeño: use mild, hot or whatever you prefer or for a deliciously sweet twist use sweet heat jalapenos.

Variations

  • Add green chilies or hot sauce for some heat.

Dietary Modifications

  • This high-protein queso dip is gluten-free as is.
  • I do not recommend trying to make this dairy-free.

How to make cottage cheese queso (a visual step-by-step guide):

Step 1: combine all ingredients

Step 2: add mix-ins

Olives, jalapenos, cheddar cheese, pepper jack cheese, bell peppers and cilantro added to the bowl with the cream cheese to combine.

Add the pepper jack, cheddar, black olives, cilantro, red bell pepper and pickled jalapenos to the mixture (image 3).

Mix to fully combine (image 4). Place in the fridge, covered and let set and chill for one hour prior serving.

Expert Tip

Shred the cheese fresh from a block of cheese. This will have way more flavor than pre-shredded.

Ingredients
  

  • 16 oz. low-fat cottage cheese Good Culture
  • 1.5 Tbsp. taco seasoning Siete or homemade
  • 3/4 cup freshly shredded pepper jack cheese 84g
  • 3/4 cup freshly shredded cheddar cheese 84g
  • 2.25 oz. sliced black olives small can
  • 1/4 cup cilantro chopped
  • 1/4 cup red bell pepper finely chopped
  • 2 Tbsp. pickled jalapeños minced

Optional

  • hot sauce
  • extra taco seasoning
  • lime juice
  • green chiles

Instructions
 

  • Add the cottage cheese and taco seasoning to a large mixing bowl and mix to combine, no need to blend the cottage cheese. Add the pepper jack, cheddar, black olives, cilantro, red bell pepper and pickled jalapenos and mix to combine.
  • Let set in the fridge for an hour to chill before serving.
  • Serve and enjoy with chips or sliced raw veggies.
