Pistachio Peanut Butter Chocolate Covered Dates

Look no further for a sweet treat that will satisfy your sugar cravings and give you a quick energy boost. These chocolate-covered dates are stuffed with creamy peanut butter, dipped in your favorite kind of chocolate and rolled in crushed pistachios. I’ll take 5, please.
You don’t have to be a fan of dates to love these. The chocolate and pistachios makes these a luxurious treat and the date has a rich caramel feel and texture. I’m a woman obsessed.
Don’t stop at just pistachios. Try these sprinkle topped peanut butter dates or sprinkle some sea salt over the melted chocolate and call it a day.

Ingredients and Substitutions:
These are the main ingredients and substitutions. See recipe card below for full ingredients list and instructions for these pistachio chocolate dates.

- Large Medjool Dates: these are the best type of date for these because they’re larger, softer and better to stuff. Deglet noor dates are small and great if you want something less filling. Be sure to remove the pits; most grocery stores sell with the pits removed but sometimes don’t taste as fresh.
- Peanut Butter: I used smooth Jiff peanut butter. You can use crunchy peanut butter or natural peanut butter or try with a nut butter like almond butter, cashew butter, sunflower seed butter or switch it up with other spreads like nutella and Biscoff cookie spread.
- Chocolate: this recipe uses dark chocolate but milk or white would be great as well.
- Coconut Oil: used to help melt the chocolate.
- Pistachio: these dates a coated in crushed pistachios for a fun and crunchy flavor. You can also add them into the peanut butter stuffing.
Variations
- Use any crushed nuts for the top.
- Swap peanut butter for biscoff cookie spread, trust me!!
- Stuff with marshmallow cream vs. peanut butter and top with graham crackers.
- Top with peanuts for a snickers bar flavor.

- For dairy-free just be sure to use dairy-free chocolate chips and be sure your peanut butter is dairy-free as well.
- Make these with PB2 for a less fat version.
How to make these chocolate covered dates (a step-by-step visual guide):
Step 1: prep the dates
Line a baking sheet with parchment paper. Make a slit in each date, across the top. Carefully pry open the slit to make it easier to fill (image 1).

Step 2: fill with peanut butter

Spoon peanut butter into each date. Fill each but do not overflow, about 1 teaspoon of peanut butter (4g). (image 2).

Place the filled dates in a freezer for 10 minutes to harden up (image 3).
Step 3: coat in chocolate
Once the dates are set, prepare your chocolate. In a small heat-safe bowl, add dark chocolate chips and coconut oil. Cook for 1 minute. Remove from the microwave and stir well. The chocolate will continue to melt as you stir. If needed, pop it back into the microwave for an additional 20 seconds. Mixture should be smooth. Once dates are set, prepare your dipping station. This part will go quickly so be sure to have your chocolate, sea salt and crushed pistachios ready.
Step 4: top with sea salt & pistachios

Place stuffed dates in the melted chocolate one at a time. Roll it around with a fork to fully coat. Drip excess chocolate off before placing back on the baking sheet (image 4).

Quickly sprinkle top with sea salt and crushed pistachios. With the stuffed dates being cold these will set very quickly. You will want to dip and sprinkle each date one at a time. Repeat this step until each date is dipped and sprinkled (image 5).

Dip, sprinkle and repeat. Don’t let the chocolate harden before you sprinkle.

Recipe FAQs
Chocolate covered dates are best stored in an airtight container in the refrigerator or freezer. To enjoy from the freezer, place on a plate for a couple minutes to defrost at room temperature. These will last for a long time in the freezer, I recommend about 3 months max.ย
These are an excellent treat to enjoy with a ton of great nutrients you can feel good about. Your treat is as only good as your ingredients, so if you want to be mindful of keeping this healthy and nutritious be mindful of the nut butters and toppings you use. I would recommend choosing a nut butter with zero added oils and sugars.ย
Medjool dates are the best for these because they’re large, soft and perfect to stuff and coat. Deglet noor dates are much smaller and harder so tend to get hard when coated with the chocolate. If you like more crunch and want to pop them in your mouth at once, go with deglet noor!
