What is Crack Out Tater Tot Casserole?

This recipe is a combination of two fantastic recipes, crack chicken which is a cream based chicken recipe and tater tot hot dish. If you’ve never had tater tot hot dish, don’t worry it’s next on my list to make macro friendly. It’s actually quite hysterical that I am blogging this cracked out tater tot hot dish because in 2014 I tried to “health-ify” my husbands grandmas tater tot hot dish and it was so bad that it made it into our wedding vows in 2016. I am happy to report this was wildly approved by my husband and I have redeemed myself.

Can you use other meats beside chicken?

Definitely! Use ground turkey, beef or even rotisserie chicken for this cracked out tater tot casserole. Just be sure to cook the meat prior to mixing with the rest of the ingredients. 

What size casserole dish should you use?

I am using a 8 inch by 8 inch dish but you can use any size for this cracked out tater tot casserole.

How to lower the fat per serving

If you need to lower the fat in each serving turkey bacon and reduced fat cheese. Reduced fat cheese will not melt as well but will save some calories and grams of fat per serving in this cracked out tater tot casserole.

Ingredients and Substitutes:

These are the main ingredients and substitutions. See recipe card below for full ingredients list and instructions for Cracked Out Tater Tot Casserole.

Chicken Breast: this recipe uses boneless skinless boiled chicken breast. You just need to have the chicken cooked prior to adding to the rest of the ingredients. I usually boil and shred mine but you can use the instant pot and crockpot as well. 

Greek Yogurt: I am using 0% fat unflavored Fage greek yogurt. Don’t worry this recipe will not taste like greek yogurt. You can substitute with 5% greek yogurt or even sour cream. The macros will change. 

Cream of Chicken Soup: you’ll use one 10.5 oz. can of cream of chicken soup. I like to use the reduced sodium can. 

Cheddar Cheese: this recipe uses full fat cheddar cheese. You can use pre shredded or shred directly off a block. I would not suggest using low fat as it does not melt as well as full fat but that is entirely up to your preference. 

Dry Ranch Seasoning: I believe each single dry ranch seasoning has 2 Tbsp. inside. You can use a single pack of dry mix or if you like using dry mix in and on everything like we do then get the big jar. 

Tater Tots: this recipe uses 4 servings of frozen Ore-Ida Golden Tater Tots. You can put them all mix in or save some to put on top or if you’re feeling crazy add another serving on top before baking. 

Bacon: after baking you will top this casserole with 4 pieces of bacon. Nutrition facts are for 80 calories for 2 slices of bacon. You can also use turkey bacon.

How to make this casserole:

Step 1

For the chicken: cover the chicken in water in a pot and bring to a boil. Cook medium high, so that the water doesn’t overflow, for approximately 20 minutes until the chicken is cooked through. Shred with forks. 

Step 2

While the chicken boils, pre heat the oven to 350 degrees Fahrenheit. 

Step 3

In a large bowl combine greek yogurt, cream of chicken soup, cheddar cheese, ranch seasoning, dried dill, garlic powder, onion powder, salt and pepper. Mix together well to combine. 

Step 4

Add the shredded chicken to the mixture and combine. Lastly, fold in the frozen tater tots. Optional you can save some tater tots to put on the top or add additional if desired. 

Step 5

Bake in the oven for 50 minutes until your cracked out tater tot casserole is hot and bubbling. If you put tater tots on top you’ll want to be sure they’re golden brown. 

Step 6

While the casserole bakes cook your bacon and crumble. Remove the casserole from the oven and top with crumbled bacon and chopped green onions. Serve and enjoy!

What to serve with this recipe?

This cracked out tater tot casserole is great as a standalone meal. You could also serve with a side salad or roasted vegetables.

    This recipe is absolutely amazing. I meal prepped it for the week. I didn’t have dill, so I left that out. I substituted the tater tots with alexia sweet potato puffs (basically sweet potato tots) and it came out delicious. I’m eating it for lunch at work right now, it reheated wonderfully. This is going to be a recipe I prep for the week at least once a month, I don’t think I can get tired of eating it.

My picky son even said “this is really, really good!” I’m a sucker for anything with potatoes and cheese, so having this dish fit into my macros is a dream! Love that high protein number!
