When you find a good granola it’s hard to stop snacking on it. Usually, it’s high calorie, high fat and high carb. That’s why I originally created my homemade healthy vanilla granola and low carb lemon granola. And now, I’ve brought you an incredible s’mores version.

I’ve spent a lot of time perfecting a low carb alternative and this s’more granola is no exception. It pairs two of my favorite things .. granola and s’mores. Nothing says summer like roasting s’mores over the campfire and now you can keep summer around all year long. With a few pantry staples, you’ll can have a low carb dessert for breakfast that is ready in no time and tastes like summer.

This s’mores granola was inspired by the s’mores we all love but I didn’t want the mess nor did I have a campfire. Holy heck, it’s so good, my family ate the whole batch in 5 minutes. The marshmallows spread over the granola perfectly with the melted chocolate and is the perfect combination of flavors.

How to store this granola

You can store s’mores granola in an airtight container for up to three months. I highly suggest making double or triple the batch if you intend to do this, because it is one of those snacks that once you start, it’s hard to stop. 

What to pair this granola with

The first time I made this, we ate the s’mores granola with our hands straight from the cookie sheet. Don’t judge, I didn’t know it was going to be THAT good. The next time, I made extra so was able to enjoy it so many ways. The kids love to eat it like cereal in the morning with a little milk. I eat it as a parfait with Fage plain non-fat Greek yogurt. Or, as my husband prefers, grab the jar and go to town. Any way you decide to enjoy this granola, will be the right way, it’s just so good. 

Is this recipe gluten and dairy-free?

S’mores granola is dairy-free if you use dairy-free chocolate chips and marshmallows. Dandies is a good vegan marshmallow brand and Enjoy Life is a good chocolate chip brand. This recipe is not gluten-free due to the cereal and graham crackers, but if you can find gluten-free alternatives for these ingredients, go for it!

Ingredients and Substitutes:

These are the main ingredients and substitutions. See recipe card below for full ingredients list and instructions for s’mores granola.

Old Fashioned Oats: this recipe uses old fashioned or rolled oats. Do not use instant oats for this recipe.  

Puffed Rice Cereal: you will need puffed rice cereal for this recipe, linked here. I like the brand Arrowhead which can be found at my local grocery store on the bottom shelf (in a bag) and Target.

Vanilla Protein Powder: I am using Optimum Nutrition Gold Standard Whey Vanilla Ice Cream protein powder. You can use your favorite vanilla protein powder or other flavors as desired. You’ll need one scoop. 

Graham Cracker: I buy whatever is on sale. You will be using two sheets.

Coconut Oil: to combine the dry ingredients this recipe uses 1/4 cup of melted coconut oil. You can substitute 1:1 with butter. 

Lite Pancake Syrup: to combine the dry ingredients this recipe uses 1/4 cup of lite sugar free pancake syrup, you can substitute with 100% pure maple or honey.

Mini Marshmallows: any standard mini marshmallow, Signature Select brand is what I used. 

Chocolate Chips: I used O Organics. You can swap with Lily’s for a lower calorie option but I find they don’t melt as well as regular chocolate chips.

How to make s’mores granola

Preheat the oven

Preheat the oven to 350 degrees Fahrenheit. 

Combine dry ingredients

Combine the oats, puffed rice, vanilla protein powder and graham crackers in a bowl and mix together.

Add the wet ingredients

Melt the coconut oil and add to the bowl of dry ingredients. Add the syrup and stir together so everything is evenly coated.

Bake

Spread the granola onto a parchment lined baking sheet so that there are no large clumps, leaving a lot of spaces between the granola in a single layer on the pan. This will help it dry out while baking. Bake for 8-10 minutes, remove from oven and top the granola evenly with the marshmallows and chocolate chips. Place back in the oven for 2-4 minutes to melt the toppings.

Remove from oven and mix

Remove from the oven and slightly mash together so the melted marshmallows and chocolate spread throughout the granola as it will be sticky when it comes out of the oven. See picture above.

Cool and enjoy!

Let the granola cool completely on the sheet pan before serving or storing. Letting the granola cool will make the marshmallows and chocolate cool to the granola making large delicious chunks of s’mores.
