Made with PB2 instead of real peanut butter, you get the same savory peanut sauce with a fraction of the fat and calories. You can make your sauce as thick or thin as you like, by adding more water to the PB2 mix.

Ingredients and Substitutions:

These are the main ingredients and substitutions for chicken lettuce wraps with peanut sauce. See the recipe card below for the full ingredients list and instructions. 

Ground chicken, bell pepper, carrots, green onions, cucumber, peanuts, butter lettuce and peanut sauce for wraps.
  • Ground Chicken: Use ground turkey, chicken breasts, rotisserie chicken or leftover chicken.
  • Syrup: Lite pancake syrup can be substituted, regular syrup, maple syrup or honey.
  • Coconut Aminos: soy sauce works fine here it is just a bit saltier.
  • Homemade Peanut Sauce: you can also use storebought if you don’t want to make Lower Calorie Peanut Sauce.

Variations

  • Bean sprouts and water chestnuts are excellent added too.
  • You can also use romaine lettuce, but I highly suggest the butter lettuce.

How to make chicken lettuce wraps with peanut sauce (a step-by-step visual guide):

Step 1: make peanut sauce

Powdered peanut butter, water, cinnamon, syrup, coconut aminos, red curry paste, garlic and red pepper flakes in a mixing bowl for the peanut sauce.

In a medium bowl combine the peanut sauce ingredients (image 1).

Mix until well combined and set aside (image 2).

Step 2: cook chicken

Ground chicken added to a hot skillet to cook.

Spray a large skillet over medium heat with nonstick cooking spray and add the ground chicken (image 3).

Cook, breaking into bite-sized pieces until cooked through, approximately 5 minutes (image 4).

Step 3: add sauce to chicken

Some of the peanut sauce added to the cooked chicken in the skillet.

Once cooked through lower the heat to low and add ¼ cup of the peanut sauce (64g) to the cooked chicken (image 5).

Sauce stirred into the chicken to evenly coat it.

Mix to evenly coat the chicken in the sauce (image 6). Let the chicken simmer on low while you prepare your lettuce wraps. 

Step 4: prep and assemble lettuce wraps

Evenly split the cooked chicken to each piece of lettuce, with desired add-ins like bell pepper, cucumber and carrots. Top with 2 Tbsp. (30g) peanut sauce and chopped green onions and peanuts.

Recipe FAQs

How to store leftover lettuce wraps?

Store these in an airtight container in the fridge for up to 4 days. Store your peanut sauce and cooked chicken separately, for the best flavor. If your sauce has thickened too much add a little bit of water to thin it out.

How to serve peanut chicken lettuce wraps?

Serve your lettuce wraps a little lime juice, sliced green onions or a sprinkle of sesame seeds.

Ingredients
  

  • 1 lb. lean ground chicken 98/2

Peanut Sauce

  • 1 cup PB2 powdered peanut butter 78g
  • 1/2 cup water
  • 1/8 tsp. ground cinnamon
  • 2 Tbsp. lite pancake syrup 30g

For Wraps

  • 8 leaves living butter lettuce
  • bell peppers sliced thinly
  • carrots julienned
  • cucumber sliced
  • chopped peanuts
  • green onions sliced
  • limes

Instructions
 

  • In a medium bowl combine the peanut sauce ingredients, mix until well combined and set aside. 
  • Spray a large skillet over medium heat with nonstick cooking spray. Add the ground chicken and cook, breaking into bite sized pieces until cooked through, approximately 5 minutes. 
  • Once cooked through lower the heat to low and add ¼ cup of the peanut sauce (64g) mixing to evenly coat the chicken. Let the chicken simmer while you prepare you lettuce wraps. 
  • Evenly split the cooked chicken between each piece of lettuce, with desired add-ins like bell pepper, cucumber and carrots. Top with 2 tbsp. peanut sauce (approx 30g) and chopped green onions and peanuts.
