I’m a lover of all things sandwich. Crab and artichoke sandwich, macro friendly subway sandwiches, Italian sliders, you name it. But sometimes, I want something lighter, more refreshing and with a crunch. Cue, the lettuce wrap.

Crunchy, sweet, savory, and absolutely delicious…these chicken lettuce wraps have it all. With fresh ingredients, ground chicken and a flavorful but light peanut sauce, this easy meal is not only healthy, it’s also ridiculously yummy.

If you love this peanut sauce as much as I do, be sure to check out my cookbook which takes this sauce and uses it in 3 completely different ways!

It’s not just chicken you can add to lettuce wraps! Try lettuce wraps with Teriyaki Beef Bowls, Philly cheesesteak Sloppy Joes and Instant Pot Shredded Beef.

Why you’ll love this recipe

  • All the flavors and textures wrapped in a lettuce wrap.
  • Low fat and high protein.
  • Low-carb, gluten-free and dairy-free.

Homemade peanut sauce

I could eat this low calorie peanut sauce every single day and not get bored. It’s easy to make, cheaper than buying store-bought and way healthier, with no preservatives or unnecessary sugars or salt. Goodbye bottle…helloooo homemade!

Made with PB2 instead of real peanut butter, you get the same savory peanut sauce with a fraction of the fat and calories. You can make your sauce as thick or thin as you like, by adding more water to the PB2 mix.
