Ingredients and Substitutions:
These are the main ingredients and substitutions for this easy Biscoff overnight oats recipe. See recipe card below for full ingredients list and instructions.

- Unsweetened Vanilla Almond Milk: any non-dairy milk or milk of choice. I like oat milk, soy milk, cashew milk or coconut milk.
- Vanilla Protein Powder: I’m using PEScience Gourmet Vanilla protein powder, which is a whey casein blend that thickens up very well in overnight oats. Use code OHSNAP to save. Make sure to use one you love that won’t be chalky.
- Chia Seeds: these give the oats an amazing texture while adding healthy fats.
- Old-Fashioned Oats: old fashioned oats (rolled oats) are the best oats for overnight oatmeal. Quick oats (instant oats) get too mushy and steel cut oats remain too hard.
- Biscoff Cookies: these get super soft and delicious when sitting overnight. I love to add more on top for the crunch factor.
- Biscoff Cookie Butter Spread: this cookie butter spread is like biscoff cookies in a jar. It’s absolutely delicious.
Variations
- Add a drizzle of low calorie peanut butter syrup.
- This is perfect sweet as is, but if you want it sweeter, add a drizzle of maple syrup, honey or brown sugar.
Dietary Modifications
- For dairy-free, use a vegan protein powder.
- This recipe is gluten-free if using certified gluten-free oats and a protein powder that is gluten-free. You will also need to use a gluten-free cookie butter spread.
How to make these lotus Biscoff overnights oats (a step-by-step visual guide):
Step 1: mix oat ingredients
Add the almond milk and protein powder to a mason jar or other airtight jar. Combine until mixed well. Mix in the chia seeds until combined. Add the rolled oats and cookie crumbles and give it a good stir.ย Heat the biscoff spread in a small bowl in the microwave to melt and soften so itโs pourable. Add the melted cookie butterย over the top of the oats inside the jar and swirl into the top. Seal and place in the fridge to set overnight.ย

Step 2: remove and add toppings
When ready to enjoy, remove and stir together or top with additional cookie crumbles, cookie butter spread or Greek yogurt for added protein.

Expert Tip!
This amount of milk and chia seeds make a thick overnight oats texture. If you want a more runny consistency, add extra almond milk or less chia seeds.

Old-fashioned oats, often called rolled oats, are the best for overnight oats because they become super creamy overnight. Steel-cut oats tend to be too firm, even after soaking and quick oats become too mushy and soggy.
Yes! PEScience is my preferred brand when it comes to overnight oats, baked oats and pretty much any kind of protein powder baked good. I like gourmet vanilla and chocolate truffle as a base in my pantry for any recipe. It results in a nice and thick overnight oat. PEScience is a whey casein blend. If you use other blends ex. whey only you may want to lower the liquid because it does not get as thick as a whey casein blend does. You want to be sure you love the flavor and texture of your protein powder as it makes a huge difference in the flavor of your oats.
You’ll lose the protein if you omit it but if that’s ok with you, up the oats to 1/2 cup, lower the almond milk to 1/2 cup and omit the protein powder.
Yup! Zap in the microwave or warm over the stove when you’re ready to enjoy.

- 3/4 cup unsweetened vanilla almond milk 180ml
- 1 scoop protein powder, 31g 4 scoops for 4
- 1.5 Tbsp. chia seeds, 15g
- 1/4 cup old-fashioned oats, 20g 1 cup for 4
- 1 Biscoff cookie, crumbled 4 cookies for 4
- 1 Tbsp. Biscoff cookie butter spread, 15g melted
