This mint blueberry mocktail recipe is a light and refreshing non-alcoholic drink, perfect for family gatherings, baby showers and hot summer days. 

This is a great drink for those that don’t like their drinks too sweet. It’s sweetened with just a little bit of honey with notes of coconut, mint and lime coming through. If you want to add a little sweetness, add a little blueberry syrup or try this simple syrup recipe

Coconut water, sparkling water, lemon juice, honey. mint and blueberries for mocktails with a bowl of ice.
  • Coconut Water
  • Sparking Water: I used plain but any flavor club soda will work.
  • Sweet Blueberries: fresh or frozen. I always make this during blueberry season when the blueberries are the freshest.
  • Fresh Lemons: squeeze fresh lemon juice for the best flavor.
  • Honey: maple syrup or agave nectar.

Variations

  • Add fresh fruit. I like to add frozen blueberries prior to serving to keep the drink nice and cold.
  • Try ginger beer for a little zing of ginger.
  • If you want this sweeter, try a little splash of blueberry juice.
  • Add fresh lime juice and lime wedges.
  • Go from mocktail to cocktail by adding vodka.

How to make this Blueberry Mint Mocktail recipe (a step-by-step visual guide):

Step 1: add and muddle

Mint, blueberries and honey in a cup.

Add the blueberries, mint, honey, and lemon juice to a tumbler, mason jar or bottom of the glass (image 1).

Muddle with a cocktail muddler or a wooden spoon until the blueberries have begun to release their juices and are mostly broken down (image 2).

Step 2: add sparkling water

Ice added to the cup.

Add ice cubes or crushed ice to the blueberry mixture to fill the glass about halfway to three-quarters full (image 3).

Seltzer water being poured on top.

Pour the coconut water into the glass then top it off with sparkling water or seltzer (image 4).

Step 3: serve

You can enjoy the mocktail as-is or give it a gentle stir. Garnish with fresh mint leaves if you like (image 5).

Yes! I love these with lime sparking water!

Can I make a bigger batch of this?

Yes, you can multiply the recipe by how many servings youโ€™d like to make. Instead of making the mocktail in a glass, add the blueberries, mint, honey, and lemon juice to a pitcher. Muddle, then add the coconut water. Add the sparkling water right before serving and put ice into the glasses rather than the pitcher.

Can I add alcohol to this?

For sure! For anyone who wants to real deal cocktail, just add vodka or your favorite liquor or even champagne.

How to avoid blueberry chunks?

Muddle in a shaker, add the coconut water and shake. Then strain the mixture into a cocktail glass filled with ice and top with seltzer water.

Ingredients
  

  • 1/3 cup fresh blueberries
  • 1 handful fresh mint leaves
  • 1 tsp. honey
  • 1 Tbsp. freshly squeezed lemon juice
  • Ice
  • 1/4 cup coconut water
  • 1/4-1/2 cup plain sparkling water or seltzer

Instructions
 

  • Add the blueberries, mint, honey, and lemon juice to a tumbler or rocks glass. Muddle with a cocktail muddler or a wooden spoon until the blueberries have begun to release their juices and are mostly broken down.
  • Add ice cubes or crushed ice to the blueberry mixture to fill the glass about halfway to three-quarters full.
  • Pour the coconut water into the glass then top it off with the sparkling water or seltzer.
  • Option: you can muddle in a cocktail shaker, then add the coconut water, shake and pour in a glass to avoid blueberry chunks, then top with seltzer. Delicious both ways.
