These buffalo chicken sliders are easy, delicious and addicting. Avocado salsa and queso combined with spicy buffalo sauce gives a ton of flavor that balances the sweetness of the rolls. These are one of my favorite recipes to whip up when I’m feeling creative. 

These are incredibly easy to throw together, making them perfect for family dinner or game day appetizer. I buy pre-seasoned uncooked chicken but avoid cooking altogether by tossing rotisserie chicken in wing sauce and then baking in the oven.

Serve your slider rolls with a side of cottage cheese ranch dip, celery sticks and carrot sticks. Serve them alone or with other delicious sliders like, Italian sliders, chicken bacon ranch sliders or chicken pesto sliders.

Ingredients and Substitutes

These are the main ingredients and substitutions for this buffalo chicken sliders recipe. See the recipe card below for the full ingredients list and instructions.

  • King’s Hawaiian Rolls: sweet Hawaiian rolls go perfectly with the spicy chicken. Use any type of dinner rolls or slider buns but I suggest using one with a touch of sweetness.
  • Seasoned Chicken Breasts: I used chicken breasts that were pre-seasoned with buffalo seasoning. Make your own buffalo chicken using this buffalo chicken bowl recipe or keep it simple by using rotisserie chicken tossed in Frank’s red hot sauce to get the spicy buffalo flavors.
  • Queso Dip: any brand.
  • Mexican Cheese Shreds: mozzarella cheese or cheddar cheese.
  • Avocado Salsa: use a store-bought avocado salsa or make your own by taking your favorite salsa and mash avocado into it.

Variations

  • Dip your Hawaiian sweet rolls into creamy ranch dressing or blue cheese dressing.
  • Add dairy-free ranch seasoning to your queso dip for extra flavor.

Dietary Modifications

  • For gluten-free, use a gluten-free sweet roll. Be sure none of your salsa or queso contains gluten.

How to make spicy buffalo chicken sliders (a step-by-step visual guide):

Step 1: pre-heat and prep

Pre-heat oven to 350. Spray a baking sheet with nonstick cooking spray.

Step 2: cook chicken

In a pan over medium heat, cook buffalo chicken breasts until cooked through.

Step 3: slice rolls

Using a long serrated knife, in one piece, slice the rolls in half, removing the top half of the rolls from the bottom and place the bottom half of the rolls in the baking dish.

Step 4: add chicken and cheese and toast

Top rolls with cooked chicken and cheese. Place tops back on the rolls. Spray top of the rolls with cooking spray and sprinkle sesame seeds or everything but the bagel seasoning. Bake at 350 F for 15 minutes.

Step 5: remove and top with queso and salsa

When the rolls are toasted and browned, pull out of the oven and remove the tops. Top with warmed queso, salsa and chopped green onions. You can add chopped cherry tomatoes now or with each individual slider.

Expert Tip!

Slice the buns hamburger style in one solid piece. Do not cut them into individual sliders until ready to serve.

How to store leftovers?

Store leftover sliders in an airtight container in the fridge for up to 2 days. The bread tends to get soggy if left with the sauce so I like to remove the tops when storing. Reheat in the oven at 350 degrees F for a few minutes to make it toasty and melty.

What to serve with your sliders?

Serve with a side of ranch dressing, veggies, fries, etc. These sliders go with everything!

Can I use pre-cooked chicken?

Yes! This recipe is super easy to use leftover or rotisserie chicken. I like to toss the chicken in my favorite buffalo wing sauce first to give it the spicy buffalo flavor.

Instructions
 

  • Pre heat oven to 350.
    In a pan over medium, cook buffalo shredded chicken until cooked through.
