Using this method you can be confident you’ll have perfectly cooked salmon every time. These foil packets are simple, flavorful and you can swap out veggies or sauces using the same method each time.

Living in Alaska we’re lucky to have a freezer fully stocked with fresh Alaskan Salmon and Halibut, however it does require work! People always ask us how we survive the cold dark winters and my answer is always the same, have you seen what summer is like up here? Our summers are spent fishing, hiking, boating, sight seeing and just soaking it all up before winter. It really makes the summers more enjoyable because you know it’s short and you need to enjoy it while it’s here. 

Fishing is something my family enjoys doing throughout the summer. It is something that we have all bonded over and a tradition that has been passed down through the generations. My oldest daughter caught her first 3 fish last summer (2020) with her Dad and Grandpa and I cannot wait for her to get out there again this year.

Fishing for salmon is one of our favorite Summer activities!

These Salmon Foil packets are so flavorful and juicy. The moisture from the salmon and the coconut aminos make for a perfect sauce that the veggies and potatoes cook perfectly in.

Be sure to cut your potatoes thin so they cook through and are nice and tender when the salmon is done cooking. You can do this with a knife or mandolin. 

How do you know when your salmon is fully cooked?

  • Flakes easily with a fork. 
  • Not mushy in the center. 
  • Pull it out before it dries out! 

Vegetable Swaps: 

  • Asparagus, Bok Choy, Zucchini, Carrots 

Toppings:

  • Additional Sweet & Spicy Sauce 
  • Chopped green onions

You can also broil at the end to get a nice glaze. Be sure not to burn or over cook the fish!

Basically never turn your back to a broil situation.

Ingredients
  

  • 4 oz. filet of Salmon, raw
  • 1/2 small potato, very thinly sliced 100g
  • 1 cup  chopped broccoli 100g
  • 1 Tbsp. coconut aminos (or soy sauce)
  • 1 Tbsp. Sweet and Spicy Soy Chili Sauce (Private Selection Brand)

Instructions
 

  • Pre heat oven to 400 F.
    Lay foil out on a baking sheet.
  • Thinly slice potatoes, you could also use a mandolin here to ensure they are thin enough. Lay along the center of the foil.
    Top potatoes with salmon filet and surround the salmon with broccoli.
  • Pour coconut aminos (or soy sauce) on top of the salmon and drizzle the Sweet & Spicy Soy Chili Sauce directly on top.
    Tent with a second piece of foil and secure edges to close the pack up tightly.
  • Bake at 400 for 20 minutes until the salmon is fully cooked. If your salmon filets do not easily flake with a fork when you remove them from the oven place them back in the oven for another 3-5 minutes until the meat easily flakes with a fork.
    Unwrap and enjoy! We eat it directly out of the pack. Recipe is for one salmon pack but you can make multiple and bake at the same time.
