These homemade egg rolls are made with a flavorful ground chicken and cabbage filling that comes together in one pan and then baked to crispy perfection in the air fryer.
Using the air fryer for these crispy egg rolls means using less oil than any deep-fried version but still getting that golden brown satisfying crunch that egg rolls need. Add your favorite dipping sauce and you have a restaurant worthy snack or delicious appetizer.

How to make these crispy air fryer egg rolls (a visual step-by-step guide):
Step 1: brown turkey
Spray a large skillet with cooking spray and brown ground turkey in a pan over medium-high heat. Once browned, add 1/2 tsp. sesame oil and stir. Drain any excess liquid.
Step 2: make chicken and cabbage filling
Add minced garlic, broccoli slaw, coconut aminos to the turkey and stir. Simmer until broccoli is slightly soft. Add cabbage, water chestnuts, sriracha, ginger, salt and black pepper. Stir and simmer until cabbage is wilted. Mix in chopped green onions. Top with extra sriracha, drizzle of coconut aminos or sesame seeds.
Step 3: roll
Lay 1 egg roll wrapper flat on a clean work surface with one of the 4 points pointed towards you. Place 32 grams (or full recipe weight divided by 24) in the bottom portion of the egg roll paper. Work from the bottom corner closest to you and roll the wrapper over the filling, tuck in the side corners and continue to roll up like a burrito. Continue for all egg rolls.
Optional, spray egg roll with cooking spray or use a pastry brush to lightly brush with a little olive oil.
Step 4: bake
Place egg rolls in the basket of the air fryer and cook at 400 degrees F for 6 minutes. Do not layer egg rolls, work in batches as needed. Cooking time will depend on size of your air fryer.
Step 5: remove
Remove once cooked egg rolls are golden brown and crispy.

Expert Tip!
Use a damp paper towel or small amount of water to get the seam of the egg roll wrapper to stick together. Do not use too much water to avoid soggy egg rolls.
Recipe FAQs
Yes, you can bake these in the oven at 425 degrees F for 15-20 minutes, rotating halfway through.
Absolutely. I often make these with ground pork but you can use ground turkey, as well.
Yes, bake them first and store in a freezer safe bag for up to three months. Reheat from frozen in the oven or air fryer.
You can make the filling ahead of time but I don’t suggest wrapping them in the wrappers until ready cook. If you wrap them too early and let them sit too long prior to cooking, the egg rolls may become soggy.
