Crunchy, sweet, savory, and absolutely delicious, these chicken lettuce wraps have it all. With fresh ingredients, ground chicken and a flavorful but light peanut sauce, this easy meal is not only healthy, it’s also ridiculously yummy.

I could eat this low calorie creamy peanut sauce every day and not get bored. Made with PB2 instead of real peanut butter, you get the same savory peanut sauce with a fraction of the fat and calories. Make your sauce as thick or thin as you like, by adding more or less water to the PB2 mix.

โ€‹It’s not just chicken you can add to crisp lettuce. Try lettuce wraps with teriyaki beef bowls, Philly cheesesteak sloppy joes and Instant Pot shredded beef.

Ingredients and Substitutions:

These are the main ingredients and substitutions for chicken lettuce wraps with peanut sauce. See the recipe card below for the full ingredients list and instructions.

Ground chicken, bell pepper, carrots, green onions, cucumber, peanuts, butter lettuce and peanut sauce for wraps.
  • Lean Ground Chicken: Use ground turkey, chicken breasts, rotisserie chicken or leftover chicken.
  • PB2: any brand of powdered peanut butter.
  • Ground Cinnamon
  • Lite Pancake Syrup: regular syrup, pure maple syrup, brown sugar or honey.
  • Coconut Aminos: soy sauce works fine here it is just a bit saltier.
  • Red Curry Paste:
  • Fresh Garlic
  • Red Pepper Flakes: this adds a bit of heat so if spice isn’t your thing, omit them.
  • Living Butter Lettuce: butter leaf lettuce is the best lettuce for these wraps because it’s perfectly crispy and has broad leaves that are great for filling. You can use romaine lettuce, if you prefer.
  • Bell Peppers: red peppers are my favorite color to add.
  • Carrots
  • Cucumber
  • Peanuts: don’t skip the crunchy peanuts on top!
  • Fresh Green Onions: for garnish.

Variations

  • Add your favorite fresh vegetables: bean sprouts and water chestnuts are two of my favs.
  • Add fresh ginger, minced, to your sauce ingredients if you want a little kick.

Dietary Modifications

  • This recipe is gluten-free and dairy-free as written.
