These peanut butter stuffed dates are a fun little bite-sized snack. Made with Medjool dates, peanut butter, melted chocolate and your favorite toppings, this easy treat is rich, delicious and perfectly sweet.
Medjool dates are the best choice because they’re softer, bigger and much more satiating than other date varieties. Get creative with your toppings; that’s the fun part!

Ingredients and Substituions:
These are the main ingredients and substitutions for these peanut butter stuffed dates. See the recipe card below for the full ingredients list and instructions.
- Dates: I’m using medjool dates with the pits removed.
- Peanut Butter: I used Jif Creamy Peanut Butter. You can use your favorite peanut butter or use sunflower seed butter for those allergic to peanut butter. If you want extra protein, use PB2 powdered peanut butter with a dash of cinnamon and water to make a creamy peanut butter.
- Coconut Oil: this used to help melt the chocolate so it’s perfect for dipping.
- Chocolate: you can add chocolate coating or omit if you want something less sweet.

- For dairy-free, be sure any melting chocolate is free of dairy.
How to make these stuffed dates (a step-by-step visual guide):
Step 1: slice dates and add peanut butter
Slice one side of the date open with a knife into a “hot dog bun” and remove the seed. Place on parchment paper. Repeat for all dates. Add 5 grams of peanut butter to the center of each date.
Step 2: melt chocolate and dip
In a small bowl add chocolate chips and coconut oil and melt in the microwave. Melt in 10 second intervals until completely melted but thick not too runny. If the chocolate is too runny let it set for a little or pop in the fridge to firm up. Dip the peanut butter stuffed date in the chocolate on one end or cover the entire date. Set on a parchment lined baking dish. Repeat.
Step 3: add toppings and refrigerate
Add sprinkles, flakey sea salt, pumpkin pie spice or your favorite toppings. Place in the fridge to harden. Once hardened enjoy!

Be sure to melt your chocolate in intervals so it doesn’t burn.

For this recipe I am using Lily’s Chocolate chips, both dark and white chocolate. You can use your favorite brand of chocolate chips for these peanut butter stuffed dates.ย
I suggest medjool dates because they’re much larger and softer and better to stuff than deglet noor dates.
