Philly Cheesesteak Sloppy Joes with Mushrooms
A classic Sloppy Joe meets a Philly cheesesteak sandwich with this deliciously flavorful and easy dinner. Ground beef is cooked in a homemade sloppy Joe sauce and topped with melty cheese and a toasted brioche bun.
This family favorite is made in one pan and ready in less than 30 minutes. Keep it as is or add your favorite toppings and enjoy this fun twist on two favorite comfort-food sandwiches. Serve with French fries, air fryer smashed potatoes or potato salad.

Ingredients and Substitutes:
These are the main ingredients and substitutions. See recipe card below for full ingredients list and instructions for these Philly cheesesteak sloppy joes.
- Ground Beef: any ground meat works. If using ground turkey or ground chicken, add extra spices because those meats aren’t as flavorful as beef.
- Yellow Onion
- Green Bell Peppers: green are the classic bell peppers for sloppy joes.
- Brown Mushrooms: any light flavored mushrooms are best. I prefer white mushrooms or cremini mushrooms.
- Fresh Garlic
- Beef Broth: vegetable broth or chicken broth work but beef stock or broth will give the richest flavor.
- Ketchup
- Worcestershire Sauce: makes the “sloppy joe” taste.
- Arrowroot Powder or Cornstarch: thickens the sauce, do not omit.
- Cheese: provolone for an authentic Philly cheesesteak flavor. Mozzarella cheese or white American cheese are great too.
- Buns: Brioche buns are my favorite but hoagie rolls or hamburger rolls get the job done.
Variations
- Add jalapeรฑos or hot sauce for some heat.
- Turn these into Hawaiian sloppy Joes and add pineapple and a tangy bbq sauce.
- Add homemade taco seasoning to the ground meat mixture and wrap in a tortilla for a sloppy Joe burrito.
- Try Big Mac sloppy joes for a cheeseburger version.
Dietary Modifications
- For gluten-free, use a gluten-free bun.
- For dairy-free, omit the cheese and make sure your bun does not have dairy in it, as brioche buns usually do.
How to make this Philly Cheesesteak Sloppy Joes recipe:
Step 1: cook the beef and veggies
Heat a large skillet pan over medium-high heat. Add the ground beef (image 1), break into small pieces and cook until browned (image 2). Next, add the chopped onion, bell peppers, mushrooms and minced garlic to the skillet (image 3). Stir well and cook until the vegetables are softened, about 5-7 minutes (image 4). Season with salt and pepper.
Step 2: make the sauce
In a small bowl, whisk together the beef broth, ketchup, Worcestershire sauce and arrowroot powder and mix until no lumps remain. Pour the broth mixture over the beef and vegetables in the skillet (image 5). Stir well to combine. Reduce the heat to low, cover the skillet, and let the mixture simmer for about 20 minutes to thicken and reach maximum flavor (image 6). Stir occasionally to prevent sticking.ย The sloppy joe mixture should thicken up slightly.
Step 3: preheat broiler and pre the sandwiches
Preheat your oven’s broiler. Open the hamburger buns and place them on a baking sheet, cut side up. When the beef mixture is done simmering, divide it evenly among the bottom halvesย of the toasted brioche bun (image 7). Top each with a slice of Provolone cheese (image 8).
Place the meat and cheese topped buns to the oven just until theย cheese melts,ย about 2-3 minutes (image 9). Be careful not to let them burn. Remove the buns from the oven when the cheese is nice and melted and top each with the other half of the bun (image 10).

Watch these in the broiler like your life depends on it! They go from melty perfection to burned in a matter of seconds.

- 4 Brioche hamburger buns

- Place the pan in oven just until the cheese is melted and bubbly, about 2-3 minutes. Be careful not to let them burn. Remove from the oven when the cheese is nice and melted and top each with the other half of the bun.
- Optional: you can toast your buns under the broiler prior to adding the meat if you want a crispt bottom bun.

This was delicious! My 8 year old and husband loved it. I doubled the recipe, except for the mushrooms and definitely shouldโve added more corn starch to thicken it up. They were definitely sloppy, but we had fun with it.
