What kind of protein powder should you use?

I am using Optimum Nutrition Gold Standard Whey Vanilla Ice Cream protein powder. It get the large bag from Costco and it’s the perfect flavor of vanilla for pumpkin spice granola and baking. You can also get it off Amazon and most local grocery stores in their nutrition aisle.

Are there nuts in this granola?

This is nut free which keeps this granola extremely low fat! You can add your favorite combination of nuts like walnuts, pecans, pumpkin seeds, sunflower seeds or leave it nut free as directed. If you do add nuts to this pumpkin spice granola bake the same as listed in the recipe card below.

How to store this granola

Once baked and cooled place this pumpkin spice granola in a air tight container or sealable bag for up to 2 months, although I doubt it’ll last that long. 

What to pair this granola with

This pumpkin spice granola is great with vanilla yogurt or your favorite flavor yogurt. You could also add it to protein shakes and on top of ice cream.

Ingredients and Substitutes:

These are the main ingredients and substitutions. See recipe card below for full ingredients list and instructions for pumpkin spice granola. 

Old Fashioned Oats: this recipe uses old fashioned or rolled oats. Do not use instant oats for this recipe.  

Puffed Rice Cereal: you will need puffed rice cereal for this recipe, linked here. I like the brand Arrowhead which can be found at my local grocery store on the bottom shelf (in a bag) and Target.

Vanilla Protein Powder: I am using Optimum Nutrition Gold Standard Whey Vanilla Ice Cream protein powder. You can use your favorite vanilla protein powder or other flavors as desired. You’ll need one scoop. 

Pumpkin Pie Spice: this granola uses store bought pumpkin spice seasoning. You can also use homemade. 

Coconut Oil: to combine the dry ingredients this recipe uses 1/4 cup of melted coconut oil. You can substitute 1:1 with butter. 

Lite Pancake Syrup: to combine the dry ingredients this recipe uses 1/4 cup of lite sugar free pancake syrup. These range anywhere from 10-50 calories per 2 tbsp. Nutrition facts are for 50 calories per 2 tbsp.

How to make pumpkin spiced granola:

Preheat the oven

Preheat the oven to 350 degrees Fahrenheit. 

Combine dry ingredients

Combine the oats, puffed rice, vanilla protein powder and pumpkin spice in a bowl and whisk together.

Add the wet ingredients

Melt the coconut oil and add to the bowl of dry ingredients. Add the syrup and stir together so everything is evenly coated. 

Bake

Spread the granola onto a parchment lined baking sheet so that there are no large clumps, leaving a lot of spaces between the granola. This will help it dry out while baking. Bake for 15 minutes, remove and mix up the granola. Place back in the oven for 2-6 minutes, checking every couple minutes to ensure you do not burn the granola and remove once it is dry and crumbly.

    WOW! Just WOW! This recipe is so good. I look forward to my yogurt snack all day now because of this granola recipe. Literally, I could eat it like a snack just on its own, like popcorn. I may eat the whole tray if left unsupervised.
