This delicious breakfast side dish is so easy to make using only russet potatoes, simple seasonings and olive oil. The air fryer gives them the most perfect golden brown crisp without having to deep fry in loads of oil, meaning a healthier and filling way to eat everyone’s favorite side dish.

Although they’re called “breakfast potatoes,” there’s no wrong time of day to eat them. Serve them on your breakfast plate with a side of eggs and blueberry breakfast sausage, as a mid-day snack with some homemade bbq sauce, or as a complement to your air fryer bacon wrapped filet mignon for dinner.ย

  • Russet Potatoes: any kind of potatoes work. Yukon gold potatoes, fingerling, red baby potatoes or even sweet potatoes are great options. Keep the skin on, it’s how they get deliciously crispy. 
  • Olive Oil: I used extra virgin olive oil, but coconut oil, avocado oil or vegetable oil will work.
  • Seasonings: there’s really no right or wrong seasoning blend. Go with what you love. This recipe uses salt, black pepper, garlic powder and onion powder. Feel free to add any other fresh herbs you love.

Variations

  • Add chopped yellow onion, green bell pepper or green onions.
  • Cut these into strips to make French fries instead of breakfast potatoes.
  • Add hot sauce or cayenne pepper for some heat.

Dietary Modifications

  • These crispy potato are both gluten and dairy-free, as is.

How to make these air fryer breakfast potatoes:

Step 1: preheat air fryer and prep potatoes

Pre-heat your air fryer. While the air fryer is pre-heating: wash, dry and chop your potatoes into bite size pieces and place in a large bowl, leaving the skin on the potatoes.

Step 2: season potatoes

Add olive oil, salt, garlic powder, onion powder and pepper to the bowl and mix together well to evenly coat. 

Step 3: air fry

Add the seasoned cubed potatoes to the air fryer basket. You should have enough room so that no potatoes overlap but fit in one single layer. Air fry at 400 degrees F for 15 minutes. Remove the basket and give the potatoes a good shake. Place back in the air fryer for another 5 minutes until nice and crispy. 

Step 4: remove and serve

Remove from the air fryer and top with chopped green onions and serve.

Expert Tip!

Leave the skin on the potatoes. This is what makes them perfectly crispy. Just be sure to wash off any dirt or debris really well.

What to serve with these potatoes?

Top with fried eggs, add to an egg scramble or breakfast burritos. Add a dollop of sour cream or Greek yogurt and, if you want some heat, add a little hot sauce over the top. You can also serve these for dinner alongside cast iron flank steak or Cajun steak bites.

How to store leftover breakfast potatoes?

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer to crisp them back up.

How do you know when they’re done?

The air fryer breakfast potatoes will be fork tender and extra crispy on the outside when done.ย 

Can you roast the potatoes in the oven instead?

Sure thing. If you don’t have an air fryer, you can bake them at 450 degrees Fahrenheit for 20-30 minutes until fork tender. The cook time will depend on how big your diced potatoes are. Broil at the end to add some extra crisp.

  • 1.5ย  lbs. Russet Potatoes, washed and chopped
  • 1 tsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • salt and pepper to taste
  • green onion for garnish

Instructions
 

  • Pre heat the air fryer.
  • While the air fryer is pre heating wash, dry and chop your potatoes into bite size pieces and place in a bowl leaving the skin on the potatoes.
  • Add olive oil, salt, garlic powder, onion powder and pepper to the bowl and mix together well to evenly coat.
  • Add the seasoned potatoes to the air fryer pan. You should have enough room so that no potatoes overlap but fit in one tightly packed layer.
  • Air fryer at 400 degree Fahrenheit for 15 minutes. Remove the basket and give the potatoes a good shake. Place back in the air fryer for another 5 minutes until nice and crispy.
    Remove from the air fryer and top with chopped green onions and serve.
  • Note: not every air fryer is the same and some temps and times may vary. Cook until yours are nice and crispy.
    Serving note: recipe made approximately 380 grams of potatoes once cooled without green onions.
