Air Fryer Twice Baked Greek Yogurt Loaded Potatoes
Loaded with Greek yogurt, turkey bacon and cheese, these twice baked potatoes are easy for a weeknight side dish. The air fryer just makes everything a little bit easier and making baked potatoes in the air fryer is no exception.

Ingredients and Substitutions:
These are the main ingredients and substitutions. See the recipe card below for the full ingredients list and instructions for the Air Fryer Twice Baked Potatoes.
- Russet Potatoes: russet is the best choice for this but you can also use white or orange sweet potatoes.
- Plain Greek Yogurt: you can use sour cream, full fat yogurt or nonfat plain greek yogurt like I am.
- Shredded Cheddar Cheese: Use pepper-jack, white cheddar or any other cheese in place of cheddar cheese.
- Turkey Bacon: any bacon works great!

- Add spinach or veggies to the mashed potato mixture.

How to make air fryer twice-baked potatoes
Step 1: cook the potatoes
Preheat the air fryer to 400 degrees Fahrenheit.
Wash and dry your potatoes. Using a fork, poke holes around the skin of the potatoes. Spray them with olive oil spray and season with salt and black pepper. Place in the air fryer basket and cook at 400 F (image 1).
Cook for 40-45 minutes or until the skin is crispy and the inside is fork tender, flipping halfway through (image 2). Depending on the size of your potatoes the cooking time may vary.
Step 2: make turkey bacon
While the potatoes cook, cook the turkey bacon on a skillet and chop into bite size pieces. Set aside to mix into your mashed potatoes.
Step 3: remove potato flesh
Once cooked, remove the cooked potatoes from the air fryer and slice lengthwise in half (image 3).
Using a spoon, remove the insides of the potatoes, leaving the skin in tact and some of the potato along the skin to help keep its shape (image 4). Place the potato flesh in a large bowl. Repeat with all potato halves.
Step 4: mash and mix
Mash the potatoes with a fork, potato masher or hand mixer until smooth. Add the greek yogurt, cheddar cheese, butter and cooked bacon to the bowl with the potatoes (image 5).
Mix to fully combine (image 6). Season with salt and pepper to taste. Evenly add the mashed potato mixture back into the skins of the potatoes. Optional: top with additional cheddar cheese.

Step 5: second bake
Place the potato halves back in a single layer the air fryer basket, you may need to work in 2 batches depending on the size of your air fryer basket. Cook at 400 degrees Fahrenheit for 5 minutes until the cheese has melted (image 8).

Recipe FAQ’s
A fully baked potato with the inside scooped out and turned into a creamy mashed potato, loaded back into the potato skin, usually topped with cheese and then baked again until melty.
They are done when they are tender all the way through. You can test with a knife or skewer to be sure it slides easily through the potato.
Additional cheddar cheese, fresh chives, chopped green onions, dollop of greek yogurt, extra turkey bacon, or hot sauce.
Store your leftover loaded baked potato in an airtight container in the fridge for up to three days. Reheat in the air fryer to crisp back up to ensure they are just as good the next day.
