This chicken and white bean chili has a creamy texture full of white beans and tender chicken with just the right amount of spice.

I make this chili recipe when I want something warming, filling and comforting and this one nails it. My favorite way to make chili is with the slow cooker or instant pot because it allows the flavors to develop so well. Perfect example is my macro friendly chili, its made in the instant pot and has the best flavor.

But back to this warming white bean chili. Made with mild green chilies, great northern beans and juicy chicken breast, this chili recipe is going to knock your socks off..but make sure to put them back on, because it’s cold out there.

Why the slow cooker?

The slow cooker develops the flavors. The longer it cooks, the more the flavors meld together. You simply can’t always get that over the stove in 30 minutes. I use it for my high protein beef, potato and lentil stew and French onion chicken and they come out perfect every time.

Also, it’s easy! I throw everything in the pot in the morning, set the machine and go about my day. Once dinner rolls around, everything is ready to go. Brilliant.

How to make this turkey chili without an instant pot

STOVETOP: In a large soup pot or Dutch oven, cook the chicken and season with seasonings. Add all the remaining ingredients and bring to a boil. Once boiling reduce to simmer, cover and cook for 30-40 minutes to allow the flavors to meld together.

Instant Pot: Add all ingredients to the instant pot. Set to pressure cook for 15 minutes. Let the pressure release naturally for 10 minutes, then instant release.

Variations and Substitutions

  • Use rotisserie chicken or leftover chicken. If using pre-cooked chicken, add towards the end of the slow cook just to warm the chicken. You don’t want it to dry out.
  • Cannellini beans or navy beans are wonderful in this chili.
  • Add a touch of heavy cream at the end for an even thicker chili.

How to make chicken and white bean chili

Step 1: add everything to crockpot

Put everything in the crock pot on low for 5 hours.

Step 2: shred chicken

Shred chicken with two forks. Chili is ready!

Chili Toppings

This chili is a family favorite because of the topping buffet. The toppings are endless! Shredded cheddar cheese, chopped fresh cilantro, avocado slices, Greek yogurt, sour cream, lime wedges, tortilla chips and fresh jalapeño are all amazing options.

Serving size and storing notes!

Chili gets better the next day as the flavors blend together. Keep any leftover chicken chili in an airtight container in the fridge for up to three days. Re-heat over the stove on medium-low heat or the microwave. You can freeze the chili in freezer-safe containers and use it within 3 months.

  • 2 lbs.  chicken breast⁣
  • 2 cans white chili beans (rinsed and drained) ⁣
  • 1 can corn⁣ (drained)

    This recipe is unreal! Minimal ingredients in the slow cooker, I used home made beans vs canned. Very good. The chiles make it! I am going to meal prep next time and freeze a batch. Thank you for the great recipe.
