Simple Sausage and Bok Choy Pasta

Simple Sausage and Bok Choy Pasta

Do you ever cook with bok choy? It is one of my favorite vegetables and so underutilized. It brings such flavor and texture to a dish. I also love that you can find the small baby size ones which makes this recipe so easy to prep for. One little bok choy for everyone!

You will be shocked how much flavor is in this simple dish!! My three year old gobbled it right up. I have written this recipe for one serving, however it can be easily doubled or quadrupled.

To make this one serving at a time, I cooked 1 lbs. mild Italian Sausage ahead of time and reheated 2 oz. cooked for each dish.

  1. I made this recipe today and my husband and I enjoyed it. I could not get the recipe to change to 4 servings, but I added enough ingredients to make it with more than one serving. We don’t like mushrooms, but I added onions, tumeric and a little crushed red pepper. I used a organic brown rice fusilli from Trader Joe’s. It was good. Thanks.
