Do you ever cook with bok choy? It is one of my favorite vegetables and so underutilized. This Sausage and Bok Choy Pasta brings such flavor and texture. I also love that you can find the small baby size ones which makes this recipe so easy to prep for. One little bok choy for everyone!ย
You will be shocked how much flavor is in this simple dish!! My three year old gobbled it right up. I have written this recipe for one serving, however it can be easily doubled or quadrupled.
To make this one serving at a time, I cooked 1 lbs. mild Italian Sausage ahead of time and reheated 2 oz. cooked for each dish.

Ingredients
2ozmild ground Italian Sausage
1/2tspminced garlic
1baby bok choy, chopped
1handful (50g) sliced crimini mushrooms
1/2cupchicken broth
2ozย cooked pasta of choice, measured uncooked
salt and pepper
Instructions
Cook Italian sausage in a pan over medium. Once fully cooked remove from the pan and set aside. Add in bok choy, mushrooms and garlic and sautรฉ for a few minutes until garlic is fragrant. Add salt and pepper and chicken broth. Let simmer in chicken broth until the vegetables are softened and most of the liquid has evaporated.Add 2 oz. cooked pasta of choice and sausage to the pan and mix together. Enjoy.

A+ the first time I made exactly per directions. Making again tonight but baby bok choy not to be found. Using shallots and frozen trader joe petit peas instead. Preferred pasta is Orecciette. Adding parm at the end.
I made this recipe today and my husband and I enjoyed it. I could not get the recipe to change to 4 servings, but I added enough ingredients to make it with more than one serving. We don’t like mushrooms, but I added onions, tumeric and a little crushed red pepper. I used a organic brown rice fusilli from Trader Joe’s. It was good. Thanks.
