High-Protein Spinach and Feta Wraps (Starbucks Copycat)

This quick breakfast is a copycat version of the Spinach and Feta Wrap from Starbucks with double the protein and lower in carbs. This healthy wrap is easy to make and perfect for busy mornings or meal prep.

Made with egg whites, spinach, feta cheese and sun-dried tomatoes, this copycat Starbucks wrap is the perfect breakfast when you want something hearty and delicious. This high protein (41 grams!) breakfast comes together in about 10 minutes and will keep you full and satiated all morning.

This is 100 calories higher than its popular counterpart because it’s more than double the protein and lower in carbs, making it the perfect macro-friendly option to repeat all week long. This is easy to make at home with just a few healthy ingredients. Use it for meal prep by making a few and reheating in the toaster oven or air fryer for an on the go quick morning meal.

These are the main ingredients and substitutions for this delicious breakfast wrap. See the recipe card below for the full ingredient list and instructions. 

On a pink surface, prepare a delicious spinach and feta wrap inspired by Starbucks. Layer lavash with feta cheese, sun-dried tomatoes in oil, oregano, salt, garlic powder, liquid egg whites, Laughing Cow cheese, and fresh spinach for a delightful meal.
  • Joseph’s Bakery Lavash Wraps: these are lower in calories than typical white wraps and a healthier option if trying to keep your calories low. Whole wheat tortillas, Atoria’s Lavash or white tortillas also work.
  • Sun-Dried Tomatoes and Oil: sun-dried tomatoes as well as a little oil from the jar.
  • Fresh Spinach: you can use frozen spinach but be sure to completely defrost it and get rid of any excess liquid with a paper towel.
  • Liquid Egg Whites: we’re maxing out the lavash with 1 cup, I would not use any more than that or you’ll have a hard time wrapping these.
  • Laughing Cow Swiss Cheese (light): or any preferred flavor.
  • Feta Cheese: or low fat feta or goat cheese.

Variations

  • Add red pepper flakes for some heat and your favorite herbs, such as Italian seasoning or onion powder.
  • Toss in your favorite veggies: red peppers, regular tomatoes, mushrooms or onions are my favs.
  • For extra protein, add homemade maple chicken sausage or bacon.

Dietary Modifications

  • To make gluten-free, use a gluten-free wrap.
  • For dairy-free, omit the cheese or use a dairy-free cheese alternative. I love Violife feta cheese.

How to make these breakfast wraps (a step-by-step visual guide):

Step 1: make your sun-dried tomato and feta eggs

Spray a skillet with cooking spray and set to medium heat. Add the oil from the sun-dried tomatoes. Once warm, add the baby spinach and sautรฉ until wilted. Stir in the sun-dried tomatoes, garlic powder, oregano, salt and black pepper (image 1).

Pour the egg whites over the sautรฉed spinach mixture (image 2). Stir to combine and then let it sit to cook through as if making an omelet, lifting the sides to allow any liquid to be cooked (image 3). Top with the feta cheese, cover and let cook while prepping your wrap (image 4)

A four-step process showcases a delightful frittata. Step 1 features crispy bacon and fresh spinach. In Step 2, eggs are whisked in. Step 3 has the frittata perfectly cooked, while Step 4 completes it with crumbled feta on topโ€”an aromatic twist reminiscent of Starbucks spinach and feta wraps.

Step 2: roll the wrap and sear

If your lavash is too hard, microwave the lavash for 5-10 seconds to make it more pliable. DO NOT overcook the wrap or your hot eggs will make the lavash crack and break. Spread the laughing cow cheese along the lavash (image 5)

Remove the lid from your eggs and place the cooked eggs on top of the lavash (image 6) and begin folding like a burrito with the sides sealed (image 7). Spray the burrito with cooking spray on both sides then place back in the hot skillet and sear until golden brown all sides (image 8)

Recipe FAQs

How do I store leftover wraps?

Use these for meal prep and wrap them in foil or plastic wrap. Reheat in the oven, air fryer or toaster until warmed though and cheese is nice and melted.

Can I freeze these wraps?

Yes but expect them to have a different texture once reheated, especially if using the lavash bread. To freeze, wrap tightly in foil or plastic wrap and freeze in a freezer safe container. Thaw from frozen and reheat in the air fryer or toaster.

Can I switch out the cheese and/or tortilla to something else?

Absolutely! I used feta because I wanted these to be similar to Starbucks, but definitely trade it out for anything else you love. Any tortilla works great, especially if you plan to freeze these, I would suggest using a whole wheat or white flour tortilla.

  • 1 Joseph's Bakery Lavash (or favorite tortilla)
  • 1 tsp. oil from sun-dried tomato

  • 1 Tbsp. sun-dried tomato in oil, chopped
  • 1 cup liquid egg whites * 245g
  • 1/8 tsp. garlic powder
  • 1/8 tsp. dried oregano
  • 1/8 tsp. salt

  • 1 light Laughing Cow Swiss cheese triangle
  • 1 oz. feta cheese, crumbled

Instructions
 

  • Spray a large frying pan with cooking spray and set to medium heat. Add the oil from the sun-dried tomatoes. Once warm, add the baby spinach and sautรฉ until wilted. Stir in the sun-dried tomatoes, garlic powder, oregano, salt and blackย pepper.

Notes

  • Swap with your favorite type of tortilla. I am using Joseph’s Lavash bread but I also like use Tumaro wraps.ย 
  • * I would NOT use any more liquid egg whites than one cup or you will have a hard time wrapping this wrap and too heavy on the egg white flavor. I have pushed the lavash wrap as far as it’ll go with the amount of egg whites used. You can use less if preferred.ย
