Sweet and Spicy Air Fryer Carrots and Potatoes

These crispy Air Fryer Carrots and Potatoes are the perfect side dish for busy weeknights. They're a delicious combo of sweet and spicy, are easy to make and cook in less than 25 minutes.

If you need a healthy side dish that requires minimal effort, these air fryer carrots and potatoes are calling your name. They have crispy edges but are soft inside and have the right balance of heat and sweetness.

Using the air fryer is a great way to get crispy potatoes using just a little oil. It’s become one of my favorite household gadgets because it’s so dang easy and clean up is a breeze. You can play with different seasonings or keep it simple like I did.

Pair this delicious side dish with your favorite main dish, like grilled teriyaki chicken, Cajun steak bites or eat it by itself as a healthy snack.

Ingredients and Substitutes:

These are the main ingredients and substitutions. See recipe card below for full ingredients list and instructions for Air Fryer Carrots and Potatoes.

  • Yukon Gold Potatoes: can substituted with any type of potato. Sweet potatoes, baby potatoes, russet potatoes or a pound of red potatoes. 
  • Carrots: I used whole large carrots for this recipe.  Baby carrots work as well. 
  • Lite Pancake Syrup: I used lite to keep the calories down but you can use pure maple syrup, honey, brown sugar or regular syrup to sweeten up the dish.
  • Extra Virgin Olive Oil: this is what gives your seasoned potatoes their crispy texture. A little goes a long way! Avocado oil also works.

Variations

  • Play with different flavors. Add Italian seasoning, garlic powder or my favorite dairy-free ranch seasoning blend.
  • Sprinkle with a little parmesan cheese prior to baking for extra crisp.

How to make these air fryer carrots and potatoes:

Step 1: prep

While the air fryer heats, chop potatoes into quarters or smaller pieces if your potatoes are big. You want bite-size pieces. Peel and cut carrots into chunks.

Step 2: add to the air fryer basket

Add the carrots and potatoes to a large bowl and mix with 1 Tbsp. olive oil. Be sure to evenly coat the carrots and potatoes. Add the carrots and potatoes to the air fryer in a single layer and cook at 400 degrees Fahrenheit for 12 minutes.

Step 3: remove and season

Remove the carrots and potatoes from the air fryer and place back in the bowl you used to cover in olive oil. Add pancake syrup, pinch of salt and black pepper and red pepper flakes to taste. I do about 3-4 good shakes.

Step 4: return to the air fryer

Return to the air fryer and cook for another 10 minutes until the carrots and potatoes are fork-tender. Top with chopped parsley and enjoy.

Expert Tip!

Cooking time will depend on the size of your carrots and potatoes. Cut them the same size to ensure an even and perfect cook.

What should I serve with my air-fried carrots and potties?

This delicious side dish goes well with grilled teriyaki chicken, Cajun steak, or instant pot alfredo. If you have leftover air fryer potatoes and carrots, chop them up and serve them over a salad, cold.

How to store leftover carrots and potatoes?

Store any leftover air fryer carrots and potatoes in an airtight container in the fridge for up to three days. If you want them to be crispy again, I suggest heating them up in the air fryer or oven for a little bit, being careful not to burn them.

Can I make these in the oven?

Sure! Preheat the oven to 425 degrees Fahrenheit, toss the carrots and potatoes in the oil and seasonings and spread on a baking sheet in one even layer. Roast for 25-30 minutes, or until the carrots and potatoes are fork tender and golden brown. Check halfway through the cook time and give them a good toss so all sides get nice and browned.

How can I tell when these are cooked?
